I found this recipe and thought it would be great to try out in my new vitamix!
a labor of love laborious, but only due to the young coconut. Without a heavy duty cleaver or machete, I had to resort to extreme measures to bust into that thing (think hammer and chef’s knife and a plethora of coconut shell shavings all over the kitchen floor). The end results was worth it! If I made this again, I would add sweetner to the filling as it wasn’t sweet enough for me.
I stuck to the original recipe pretty closely with only the following mods:
- used 2 tsp of vanilla extract (liquid) whenever it called for vanilla beans b/c I didn’t have vanilla beans
- used ALL of the chocolate sauce…I’m glad I did this b/c it brings more sweetness to the cream part of the pie.
- used small coconut flakes on top instead of large one.
